Hippity, Hoppity Easter's on its Way with Chocolate Easter Bunnies!

Easter is just around the corner and that means our chocolate Bunnies, Ducks & Baskets have taken over the store. The bunnies quickly multiple once we start making them. They are everywhere and if you stop by the store in the weeks leading up to Easter you are sure to hear the continuous tap, tap, tap. For those of us making them the tapping and pounding of the molds seems like it never stops. Every mold has to be tapped to get rid of the air bubbles in the chocolate. But let's start at the beginning of the process.


First the molds are washed, dried & put together. The molds are 2 pieces with an open bottom. The pieces are clipped together & put in a drying rack.

We use plastic molds now, but in years past they were metal molds. Below are some of the old Easter Molds. The 2 bunny molds in the middle are still the same bunnies we make today, only with plastic molds.

Until the 80's the chocolate was all tempered by hand. The melted chocolate was poured on a marble table and mixed by hand until the chocolatier could tell it was the correct temperature. Today we have a tempering machine that tempers the chocolate and then keeps it at the correct temperature for us to use throughout the day. Below is a picture of Costas Boosalis, owner from mid 1960's-2004, making a large Easter Bunny. You can also see at the bottom of the picture bunnies, ducks, baskets & a cross that have been made, the same ones we continue to make today.

To make the molded candy: the chocolate is scooped into the bottom (open end) of the molds. The tapping then begins for anywhere from 1-10 minutes for each mold depending on the size.

The picture below shows the colossal bunny & 3 baskets filled & sitting to dry. The chocolate in the baskets is nearly dry already & the colossal has just been filled.

The chocolate goes through an entire cooling process, resulting in a shiny finish. Once the chocolate has completely dried and cooled the molds are removed. The clips come off the molds, the molds come apart from the chocolate and we now have solid chocolate bunnies and ducks to sell.
