May starts out with a bang - the first 2 weeks are filled with days to celebrate people who are heroes in so many ways. Mothers, Grandmothers, Stepmothers, Nurses, Teachers, Daycare Providers & Firefighters: they show their compassion and love daily in all they do and make our world a better place. They put others before themselves, and we honor them and thank them for their unconditional love and service. Costas Candies make great gifts for all these special people. Show them how much you care with candy that is made with lots of love and care.

May also starts with National Truffle Day on May 2. Here at Costas, we think this a great excuse to celebrate. Truffles are one of our newest types of candy. Truffles were first introduced to the candy lineup at Costas in 2004, just 21 short years ago. In 2009 there were just 10 truffle flavors: Dark, Milk, Raspberry, Black Forest, Mint, Mocha, Grand Marnier, Champagne, Caramel, Pumpkin. In the past 16 years we have added 16 new flavors of truffles, to make 26 total flavors. Some truffles are year-round standards; you will always find them in the case. Others are seasonal - like our fall Pumpkin, or our summer KeyLime truffle. Still a few others are limited edition, made just for a special holiday or event, like our Cheesecake line. We have also expanded from dark or milk truffles to adding white chocolate truffles and truffles that use 2 types of chocolate.
How are these decadent treats made?
Day 1:
Like many of our candies it is a multi-step, multi-day process. The first day the insides of the truffles are made. A ganache is made with either milk, dark or white chocolate. The flavoring is added to the ganache and then it sets overnight. Almost all of our truffles is just the ganache center, we have just a few new truffles that now have something added besides flavoring. Below is the birthday cake truffle, which has sprinkles, we also have our turtle cheesecake truffle with pecans added & the mint cheesecake with cocoa nibs added.

Day 2:
The next day the truffles are cut & rolled by hand. In the video below you can see Grant cutting strips & then the strip is cut into pieces and then rolled. White & Milk chocolate are both rolled in powdered sugar & Dark chocolate is rolled in cocoa powder. Typically, with 1 person cutting & 1 person rolling the truffles we can complete this step of the process in about 30 min, which makes about 600 truffles for 1 batch.

After the truffles are rolled, they are ready to be dipped in chocolate. It takes about 2 hours to dip the 600 truffles.

Day 3:
After the truffles have sat overnight to fully dry they are wrapped by hand with foil wrappers. We have a few truffles now that we do not wrap because we top them with sprinkles, nuts or a drizzle.
And now the truffles are finally available to you, our customers. Approximately 6 hours to make 600 truffles, a 3-day process to make 32,000 truffles! Truffles are definitely a well-loved favorite at Costas Candies. How many of our 26 varieties have you tried?

The exciting news for May, National Truffle Day & Mothers Day is: Our Limited-edition Cheesecake truffles are back!! We have 5 flavors: our standard cheesecake that is available year round, along with our 4 specialty truffles: raspberry cheesecake, mint cheesecake, turtle cheesecake, & seasalt caramel cheesecake. These will be available beginning Friday May 2 and there is a limited supply, so stop in or call ASAP to get yours!
